"Cupping" is the real, formal tasting method professional coffee tasters use to evaluate beans — genuine industry practice, not an invented term to fill the grid.

We included "terroir" (how growing region affects flavor) for both coffee and tea, since the concept applies to both even though it is more often associated with wine.
